Blueberry Handpies

These blueberry pies are probable the quickest and simplest pies you'll ever make!





Ingredients:

For Crust:
  • 1 1/2 cup of flour
  • 2 Tbsp of sugar
  • 1/3 cup butter
  • 1/2 tsp salt
For Filling:
  • 1/2 cup of dried blueberries
  • 3/4 cup of sugar
  • 3 Tbsp of lemon juice
  • 1 egg

Method:

1. Preheat the oven to 380'F or 200'C. Line a baking tray with parchment paper and grease with butter.

2. In a food processor or grinder, add the flour, sugar, butter and salt. Pulse until combined. Knead the dough so that it is not sticky. 

3. For the filling combine all the ingredients and mix with a spoon.

4. Take a little bit of the pie crust dough and flatten to make a circle. Fill with the filling. Then fold in half and seal by using a fork. Carefully transfer to the baking tray.

5. Crack and beat an egg in a bowl. Brush the egg over the pies completely.


6. Bake in the oven for 20 - 25 minutes till they are golden brown.
